Drake's Famous Onion Rings

  • 1 large Bermuda or Spanish Onion
  • 1 cup Drake's Crispy Frymix
  • 10 oz liquid (water, beer, or soda water)

Preheat oil to 375 degrees in deep-fryer. To pepare onions, cut off ends and peel. Cut into 1/2 inch slices and separate into rings (save the centers for soups, salads, relishes, etc.). Place about four or five rings in the batter at a time, tossing with utliity fork or tongs to ensure complete coating. Take from batter and place in hot oil. Cook for 3 to 4 minutes or until gold brown, turning once. Remove from hot oil and place on a wired rack to allow excess oil to drain. Makes 4 servings.


Beer Batter Fish

  • fish fillets, smelt, shrimp, frog legs, or any shellfish/seafood
  • 1 cup Drake's Crispy Frymix
  • 12 oz beer (room temperature)

Clean fish and pat dry. Preheat oil in deep-fryer to 375 degrees. Mix togehter Crispy Frymix and beer, whisking until thoroughly blended. Dip fish pieces into batter, then into hot oil. Cook for 3 to 5 minutes or until gold bornw. Remove from hot oil and place on wire drying rack. Serve with tartar sauce


Deep Fried Mushrooms

  • 1 lbs muchrooms, cleaned
  • 2 eggs, beaten
  • 1 cup Drake's Crispy Frymix
  • 6 oz beer, room temperature

Add enough beer to beaten eggs to make 1 cup of liquid. Beat in Crispy Frymix to make a thick batter (similar to cake batter). Add more beer or mix as needed to reach correct thickness. Dip mushrooms in the batter, shaking off excess batter. Fry at 375 degress for 5 to 7 minutes or until golden brown. Continually turn the mushrooms, submerging them in the oil to ensure all the batter cooks. Serve with cocktail sauce or brown sauce.


Buttermilk Chicken Strips

  • 4 whole chicken breasts, parboiled or pre-baked
  • 1 buttermilk
  • Drake's Crispy Frymix

De-bone and cut breasts into 1/4 to 1/2 inch slices lengthwise so that the strips will be 4 to inches in length. Dip strips in buttermilk, then in dry Crispy Frymix. Dip once more in the buttermilk and again in Crispy Frymix. Once coated, strips can be frozen, allwoing for the strips to be cooked in just minutes after defrosting. To cook, preheat oil to 375 and cook for 3 to 5 minutes, turning once. Remove from oil and let drain on paper towel. Serve with a sweet and sour sauce.


Drake's Scotch Egg

  • 4 eggs, boiled 4 minutes
  • 1 cup Drake's Crispy Frymix
  • 10 oz. water
  • Cracker crumbs
    Preheat oil to 375 degrees. Peel shell from egg, set aside. Mix together Crispy Frymix and water. Spread cracker crumbs on wax paper. Dip egg in batter, roll in cracker crumbs, dip once again in batter and again in cracker crumbs. Place in hot oil and cook again for 3 to 5 minutes or until golden brown, turning occasionally for even cooking. Serve with fruit and crisp bacon.

Buttermilk Crisp Cutlets

  • Veal or pork cutlets
  • Drake's Crispy Frymix, as needed
  • 1 cup buttermilk

Preheat oil in deep-fryer to 375 degrees. Dip cutlets in buttermilk, coating fully with dry Crispy Frymix. Repeat coating process. Place in hot oil and cook for 5 to 7 minutes or until golden brown, turning once. Remove from oil, drain and serve on grilled bun. Serve with cream gravy sauce.


Baked Bone-in Chicken Breasts

  • Chicken Breasts (preferably Bone-in)
  • Drake's Crispy Frymix, as needed
  • 1/2 stick of melted butter

Preheat oven to 375 degrees. Dip chicken breasts in melted butter, then coat fully with dry Crispy Frymix. Place breasts on wire rack with a baking sheet below to catch any drippings. Bake until internal temperature of breasts reaches 165 degrees (approximately 50 minutes).
